This incredibly sharp spade-shaped knife has a razor thin cutting edge on one side—perfect for shaving aged Goudas, Gruyeres, and Mimolettes—and a smooth edge on the other—ideal for spreading softer cheeses and/or demolishing an entire round of Cowgirl Creamery Mt. Tam in one sitting (no judgment). With a hardy, easy-to-sharpen hand-crafted stainless steel blade and a beautifully warm handle carved from exquisite Japanese Keyaki wood, this is a cheese-plate hero. We've also been known to use this to ice cakes, shell cardamom, and supreme oranges, so, you know, use your imagination. 6 1/2" long, 2 1/2" blade.

Take Care: Sharpen the blade as needed and occasionally oil the wood with your preferred wood conditioner (we swear by Old Mill's All Natural Beeswax and Mineral Oil Wood Polish, available right here at The Foundry), being sure to allow enough time for the wood to absorb the oil before its next use. Hand wash only, please.
