Get this: eggs naturally come out of the chicken with a shelf stable coating that allows them to stay fresh for ~two weeks (cultural aside/wild mind blown realization we had when we first got chickens: It's only when they are washed, which is done in huge batches in commercial egg production, that they then have to be fridged in transit and all the way through the delivery/supply chain. This is why you often see unrefrigerated eggs on European grocery store shelves! It's a shocking expenditure of energy all the way down the production line just because Americans don't like eggs with schmutz on them from the coop! Why are we always doing this sort of thing to ourselves!? ASIDE OVER).
